1) Cut onions to 1/4inch slices and cook in butter till caramelized.
2) Half way through add garlic, thyme, sugar and bay leaves. Once caramelized de-glaze with wine and let cook for 3 minutes.
3) Add flour and cook for 2 minutes, add stock and let cook for 10min-1hr
