Ratatouille French Bread Pizzas

Ingredients
  Olive oil 1⁄4 Cup (4 tbs)
  Onion 1 Large, chopped
  Garlic 4 Clove (20 gm), minced
  Eggplant 1 Medium, unpeeled, cut into 1/2 inch cubes
  Zucchini 2 Small, diced
  Red bell pepper 1 , chopped
  Chopped pitted olives 1⁄4 Cup (4 tbs)
  Chopped tomatoes 2 Cup (32 tbs)
  Black pepper 1⁄2 Teaspoon
  Cayenne pepper 1 Pinch
  Dried basil 1 Teaspoon
  Oregano 1⁄2 Teaspoon
  Thyme 1⁄2 Teaspoon
  Whole wheat french bread 1 , sliced in half lengthwise, then crosswise into three
Directions

MAKING
1. In a skillet add olive oil and warm it.
2. Add garlic and onions. Saute for 5 minutes till they are completely soft.
3. Combine eggplant, bell pepper and zucchini. Saute 5 minutes.
4. Simmer the vegetables for 10 minutes till they are tender.
5. Add herbs, pepper, olives and tomatoes. Simmer for 15 minutes keeping the skillet uncoveerd till the mixture thickens and excess liquid evaporates.
6. In a baking sheet arrange the bread.
7. Spread grated cheese ( 1 cup) on the bread.
8. Top it with ratatouille and with rest of the cheese.
9. Bake till the cheese is bubbly.

SERVING
10. Serve Ratatouille French Bread Pizzas piping hot.
