Creamy Mornay Sauce

Ingredients
  Butter/Margarine 1 Tablespoon
  Flour 1 Tablespoon
  Paprika 1 Dash
  Salt 1⁄4 Teaspoon
  Half-and-half 1 Cup (16 tbs) (Light Cream)
  Milk 1⁄4 Cup (4 tbs)
  Shredded gruyere cheese/Samsoe cheese 1⁄4 Cup (4 tbs)
  Shredded parmesan cheese 2 Tablespoon
  Prepared dijon-style mustard 1⁄2 Teaspoon
  White pepper 1 Dash
  Liquid hot pepper seasoning 1 Drop
Directions

MAKING
1) In a saucepan, melt the butter.
2) Stir in the flour, paprika, and salt and allow to cook till bubbly.
3) Gradually stir in the cream and milk and cook over low heat.
4) Keep stirring till the mix slightly thickens.
5) Stir in the cheeses, mustard, pepper, and liquid hot pepper seasoning into the Mornay.

SERVING
6) Use as a sauce over seafood.
