1 Into a medium saucepan, pour the milk
2 Add in the bay leaf, mace, onion, peppercorns and salt.
3 Gently heat the milk for about 7 minutes and allow to infuse the flavour.
4 Remove the pan from the heat.
5 Into a small bowl, strain the milk
6 Remove the seasonings and onion and discard.
7 In a small saucepan, melt the butter
8 Blend in the flour to make a smooth paste.
9 Gradually pour in the milk.
10 Bring to a boil.
11 Simmer for about 2-3 minutes until smooth and thick.
12 Use as desired.
