|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Milk||1 Cup (16 tbs)|
|Onion||1 Small, minced|
|Carrot||1⁄2 Small, minced|
|Claret wine||1⁄2 Cup (8 tbs)|
Cook lobster according to directions for boiled lobster.
Re- move meat from shell and cut in pieces.
Melt butter in top of double boiler over hot water.
Stir in flour, salt cayenne and nutmeg.
Combine milk, onion, carrot and oregano in a small saucepan.
Bring to a boil and simmer 5 minutes.
Slowly add hot milk to mixture in double boiler and cook until thick.
Add lobster meat and cook 5 minutes.
Add wine and heat thoroughly.
Serve over hot buttered toast.
