Basic Hollandaise Sauce

Ingredients
  Tarragon vinegar 2 Tablespoon
  Seasoned salt 1⁄2 Teaspoon
  Cold water 1 Tablespoon
  Egg yolks 1
  Butter 1 Cup (16 tbs) (2 sticks, at room temperature)
  Lemon juice 1 Teaspoon
  Heavy cream 1 Tablespoon
Directions

MAKING
1) In a saucepan, add in the vinegar and salt. Cook till the mixture reduces by half.
2) Take the pan off the flame. Add in water.
3) In a saucepan, add in the egg yolks and whisk till it turns creamy.
4) Keep the pan over a double boiler. Add in butter bit by bit. Whisk till it starts to melt.
5) As the sauce thickens, add in the lemon juice and heavy cream. Beat well.

SERVING
6) Serve the Hollandaise Sauce warm.
