Vinegar Essence For Bearnaise Sauce

Ingredients
  Wine vinegar 1⁄4 Cup (4 tbs)
  Dry white wine/Dry vermouth 1⁄4 Cup (4 tbs)
  Minced shallots/Minced green onions 1 Tablespoon
  Fresh tarragon/Dry tarragon - 1/2 tablespoon 1 Tablespoon, minced
  White pepper 1⁄8 Teaspoon
  Salt 1 Pinch
Directions

MAKING
1) In a saucepan, add vinegar, vermouth, onions, tarragon, salt and pepper to combine.
2) Place over heat to bring a boil.
3) Reduce heat to medium and cook until the volume reduced to about 2 tablespoons.
4) Place aside to cool.

SERVING
5) Use to prepare Mock Bearnaise Sauce.
