Vegetables A La Grecque

Ingredients
Vegetables:
Water - 2 cups
Small Whole White Onions - 9 (1/2 pound)
Whole Green Beans - 2 cups
Cauliflowerets - 2 1/2 cups (1/2 pound)
Celery Strips - 2 cups (1/4 pound)
Frozen Artichokes - 1 package (9 ounces)
Small Fresh Mushroom Caps - 2 cups (about 1/4 pound)
Marinade:
Chicken Broth - 1 can (10 3/4 ounces), condensed
Water - 1/2 soup can
Lemon Juice - 1/3 cup
Olive Oil - 1/4 cup
Garlic - 3 large cloves, minced
Large Bay Leaves - 2
Fennel Seed - 1 teaspoon
Peppercorns - 12
Coriander - 1/2 teaspoon, ground
Thyme - 1/2 teaspoon, ground
Directions

MAKING
1. In a large saucepan of boiling water, add oinions and beans.
2. Cover the pan and cook over low flame for about 10 minutes.
3. Further, add celery and cauliflower and cook for another 5 minutes.
4. Add artichokes and cook for 5 more minutes.
5. Add mushrooms and cook for 5 minutes or until vegetables become tender.
6. Drain the vegetables.
7. Mix the ingredients for preparing the marinade and add it to vegetables.
8. Cover and boil the mixture.
9. Chill and stir occasionally.

SERVING
10. Arrange the drained vegetables on a serving platter. Top with some spoonfuls of marinade.
