Tomato Red Pepper Coulis

Ingredients
  Sweet red pepper 1 1⁄2 Cup (24 tbs), chopped
  Tomato 1 Medium, peeled, seeded and chopped
  Onion 3⁄4 Cup (12 tbs), finely chopped
  Garlic 1 Clove (5 gm), finely chopped
  Red wine vinegar 1 Tablespoon
  Olive oil 1 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Dried whole oregano 1⁄4 Teaspoon
  Dried sage 1⁄4 Teaspoon
  Dried marjoram 1⁄4 Teaspoon
Directions

MAKING
1) In a medium-size Dutch oven, add all ingredients to combine.
2) Place over high heat and bring to a boil.
3) Cover the container and simmer for 20 minutes by reducing the heat.
4) Remove from heat and allow the ingredients to cool slightly.
5) In a container of electric blender or food processor, place the warm mixture.
6) Process the mixture to a smooth consistency.

SERVING
7) Serve the sauce warm or chilled with chicken, fish, or beef.
