Piquant Lung And Heart

Ingredients
  Beef heart/Calf heart 1 Pound
  Veal lungs 1 , pre cooked (From Soup)
  Cold pressed oil 3 Tablespoon
  Finely chopped onions 3 Tablespoon
  Soy flour 2 Tablespoon
  Tomato puree/Tomato sauce 1 Cup (16 tbs)
  Paprika 1⁄2 Teaspoon
  Apple cider vinegar/Lemon juice 1⁄4 Cup (4 tbs)
  Blackstrap molasses/Honey 2 Tablespoon
  Stock/Water 1 Cup (16 tbs)
Directions

MAKING
1) In a skillet, heat oil.
2) Add onions and saute until brown.
3) Sprinkle soy flour and paprika over it.
4) Stir in diced heart and lung, tomato sauce or puree, vinegar or lemon juice and molasses or honey.
5) Cook covered over moderate heat for about half an hour.
6) Mix salt to taste.
7) Pour stock or water and stir.
8) Cook and simmer for another half hour.

SERVING
9) Sprinkle fresh parsley over it.
