Ingredients
  Egg 1
  Egg yolk 1
  Caster sugar 1 1⁄2 Ounce
  Sherry/Fruit juice 2 Tablespoon
Directions

MAKING
1) In a bowl, add the egg, egg yolk, caster sugar, and sherry.
2) In a pot, add water and allow to simmer.
3) Place the bowl of the egg mix over the simmering water and beat till thick and frothy.

SERVING
4) Serve with poached salmon.
