Baked Vanilla Souffle

  Vanilla pod/Vanilla essence 1⁄2 Teaspoon
  Milk 1⁄2 Pint
  Caster sugar 2 Ounce (2 rounded tablespoons)
  Flour 1 Tablespoon
  Arrowroot 3⁄4 Tablespoon (1 dessertspoon)
  Butter 1 Ounce
  Egg yolks 3
  Egg whites 4
  Sifted icing sugar 1 Teaspoon (Little)

1) Prepare a souffle dish.
2) Set oven at 375°F or Mark 5.

3) Keep aside 4 tablespoons of milk.
4) In a saucepan, add milk and if using the vanilla pod, add in and allow to infuse.
5) Place saucepan on heat and allow milk to the boil, add the sugar and vanilla essence (if using).
6) Place lid over and keep aside.
7) In the reserved milk, add flour and arrowroot and blend.
8) Add the mix back to the pan of milk and heat.
9) Keep stirring the mix till it boils.
10) Keep aside and dot the top with butter.
11) Place lid and allow to sit for 5 minutes.
12) Mix well and one at a time whisk in the yolks.
13) In a bowl, add egg whites and beat till firm and gently fold into the mix.
14) In the soufflé dish, transfer the mix and place in oven for 20 minutes.
15) Remove from the oven only to sprinkle the top with icing sugar, and then bake again for 4-5 minutes to caramelize the sugar.

16) Lightly dust the top with cinnamon powder and serve.
