Spinach Souffle

Ingredients
  Onions 2 Tablespoon, grated
  Special margarine 2 Tablespoon
  Flour 2 Tablespoon
  Salt 3⁄4 Teaspoon
  White pepper 1⁄4 Teaspoon
  Nutmeg 1⁄8 Teaspoon
  Skim milk 1⁄4 Cup (4 tbs)
  Chopped cooked spinach 3 Cup (48 tbs)
  Egg yolk 1
  Egg whites 3
Directions

GETTING READY
1.Preheat the oven to 375 degrees.

MAKING
2.In a saucepan, heat margarine and cook onions in it for 3 minutes.
3.Add flour, salt, nutmeg and pepper.
4.Slowly put milk and stir until the mixture boils.
5.Cook on low flame for 5 minutes.
6.Combine spinach and egg yolks and let the mixture cool for 5 minutes.
7.Whisk egg whites until stiff.
8.Create a space in between the spinach mixture and fold in the whites.
9.Take a 1 1/2 quart souffle dish, put the mixture in it and bake for 30 minutes.

SERVING
10.Serve warm.
