Cheesy Spinach Souffle
|Cottage cheese||16 Ounce (1 container)|
|Shredded parmesan cheese||6 Ounce (1 1/2 cups)|
|Frozen chopped spinach||2 , cooked and well drained (2 packages, 10 ounces each)|
|Eggs||2 , separated|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Minced onion||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|All purpose flour||2 Tablespoon|
|Baking powder||1⁄2 Teaspoon|
|Lemon pepper||1⁄2 Teaspoon|
1 Preheat the oven to 350 degrees.
2 In a medium bowl, add cottage cheese, Parmesan cheese, spinach, egg yolks, melted butter, onion, and garlic mix well.
3 In a small bowl, mix together flour, baking powder, and lemon pepper.
4 Add in the dry ingredients to the spinach mixture and stir until well blended.
5 In a 2-quart greased souffle dish, pour in the mixture.
6 Bake uncovered for 50 to 60 minutes or the until center is set.
7 Serve warm.
