Hot Orange Souffle
|Orange marmalade||3 Tablespoon|
|Orange essence||1⁄4 Teaspoon|
|Chopped walnuts||1⁄2 Cup (8 tbs)|
|Cream fresh||1 Cup (16 tbs)|
|Grated orange rind||1⁄2 Teaspoon|
|Cream sugar||1 Tablespoon|
Whip up whites till stiff, add in sugar 1 tbs at a time and beat till it forms into soft peaks.
Stir in essence and marmalade.
Pour into a greased tin, cover and steam for 1 hour.
Turn out into a warm plate, sprinkle nuts on top and serve at once with fresh cream mixed with orange rind and 1 tbs sugar.
