Steak Au Poivre

Ingredients
  Beef shell steaks 6 , cut about 1/2 inch thick
  Peppercorns 2 Tablespoon (Black And White Variety)
  Olive oil 3 Tablespoon
  Unsalted butter 5 Tablespoon
  Salt To Taste
  Lemon 1⁄2 , juiced
Directions

GETTING READY
1. Wipe the steaks clean with a damp cloth and nick the edges at half inch intervals
2. In a pestle-mortar, crush the peppercorns ad spread them on a flat board

MAKING
3. On a flat board, spread the peppercorns and press each side of each of the steaks into it
4. Sprinkle the steaks with two tablespoons of olive oil, cover with pieces of wax paper and leave for a couple of hours in a cool place
5. In a skillet, heat three tablespoons of butter and the rest of the oil and saute a single layer of the steaks for three minutes or more on each side
6. Transfer into a warm serving dish when done and sprinkle salt over them
7. Rid the skillet of the fat and peppercorns and add remaining butter, scraping the browned juices all the while
8. Stir lemon juice into it

SERVING
9. Pour deglazing over the steaks and serve at once
