Mace Flavored Hollandaise
|Lemon juice||1 Tablespoon|
|Cayenne pepper||1 Dash|
|Margarine/Butter||1⁄2 Cup (8 tbs)|
Blend egg yolks, lemon juice, salt and cayenne pepper in small bowl.
Place margarine in another small bowl.
Microwave at HIGH (100%) just until melted, 15 seconds to 1 minute, stirring once or twice.
Blend egg yolk mixture into margarine with wire whisk.
Microwave at MEDIUM-LOW (30%) until thickened, 45 seconds to 2 minutes 15 seconds, blending with wire whisk every 15 seconds.
Check sauce often when it begins to thicken.
Blend with wire whisk before serving.
