Chocolate Souffle

Ingredients
  Unsweetened chocolate square 4 Ounce (2 Squares, 2 Ounces Each)
  Milk 2 Cup (32 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  All purpose flour 1⁄3 Cup (5.33 tbs)
  Salt 1⁄2 Teaspoon
  Butter/Margarine 2 Tablespoon
  Vanilla extract 1 Teaspoon
  Eggs 4 , separated
  Sweetened whipped cream 1⁄2 Cup (8 tbs) (Flavored)
Directions

Melt chocolate in milk in top part of double boiler over boiling water.
Beat with rotary beater until well blended.
Mix sugar, flour, and salt; add small amount of chocolate mixture, stirring until smooth.
Return to double boiler and cook until thickened, stirring constantly.
Continue cooking for 5 minutes, stirring occasionally.
Add butter and vanilla; cool slightly.
Add egg yolks beaten until thick and lemon-colored; mix well.
Fold in stiffly beaten egg whites.
Pour into buttered 1 1/2-quart souffl6 dish.
Put in pan of hot water and bake in preheated moderate oven (350°F.) for 1 1/4 hours, or until firm.
Sprinkle sugar dust on top and serve.
Makes 8 servings.
