Old Fashioned French Dressing

Ingredients
  All purpose potato 1 Small, peeled, cooked, drained, and diced to make 1/2 cup
  Canned pimientos 1⁄2 Cup (8 tbs), drained
  White wine/Water 1⁄3 Cup (5.33 tbs)
  Red wine vinegar/Apple cider vinegar 1⁄4 Cup (4 tbs)
  Olive oil 3 Tablespoon
  Dijon mustard 2 Tablespoon
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

1. In a food processor or blender, place all of the ingredients and process for 1 minute or until very smooth. Cover and refrigerate until serving time (will keep for up to 4 weeks). If the dressing thickens as it chills, stir in a little extra white wine or water. Drizzle over a vegetable, meat, or seafood salad; toss well.
