Chicken Marengo

Ingredients
  Broilers 2 1⁄2 Pound, cut up
  Flour 1 Cup (16 tbs)
  Olive oil 8 Tablespoon
  Mushrooms 12 , sliced
  Onion 1 Small, chopped fine
  White wine 1 Cup (16 tbs)
  Tomatoes 4 Medium, diced
  Pitted green olives 12 , sliced
  Brown sauce 1 Cup (16 tbs)
  Basil 1⁄2 Teaspoon
  Butter 4 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Roll chicken in flour with salt and pepper.
Brown in hot oil on both sides.
Add mushrooms and onions.
Saute a few minutes.
Add wine.
Cover.
Add tomatoes, olives, Brown Sauce and basil.
Cover.
Simmer 15 minutes.
Should sauce become too thick, add chicken broth.
Just before serving, add butter.
Serve with rice.
