Beef Bourguignon With Mushrooms
|Beef sirloin||4 1⁄2 Pound, cut in 1-inch cubes|
|Butter||3⁄4 Cup (12 tbs)|
|Mushroom caps||3 Cup (48 tbs), sliced|
|Onions||1 1⁄2 Cup (24 tbs), chopped|
|Red wine||3 Cup (48 tbs) (Preferably Burgundy)|
Melt 5 tablespoons butter in deep casserole.
Add beef cubes.
Braise in hot oven (4000) for 20 minutes.
Meanwhile, saute mushrooms and onions in remaining butter.
Stir in flour.
Add Burgundy and mix well.
Pour over beef.
Return to oven for 30 minutes.
