Ingredients
  Puff pastry 1 Pound
  Almonds 3 Ounce, blanched
  Superfine sugar 1⁄2 Cup (8 tbs)
  Unsalted butter 2 Tablespoon
  Egg yolks 2
  Dark rum 2 Tablespoon
  Egg 1
Directions

GETTING READY
1. Preheat the oven to 400°F; dampen a baking sheet

MAKING
2. Divide the pastry into two slightly unqual pices and roll each piece into a circle of about nine inch diameter
3. In a mortal, add the almonds and proud into a paste with te pestle; add six tablespoons of sugar and the butter into the paste
4. Work the egg yolks and run into it as well and pteat the paste till it's light and fluffy
5. Place the thinner circle on the baking sheet; spread almond filling in iit till about half an inch of space around and place the other circle on top
6. Mark a cartwheel like figure on top with a sharp knife and brush the top with beaten egg
7. Sprinkle with the remaining superfine sugar and bake for half an hour in the centre of the oven

SERVING
8. Serve as appropriate
