Blue Cheese Souffle

Ingredients
  Parmesan cheese 2 Tablespoon, grated
  Butter 2 1⁄2 Tablespoon
  Flour 3 Tablespoon
  Milk 1 Cup (16 tbs)
  Blue cheese 3 Ounce, crumbled
  Ground nutmeg 1 Pinch
  Salt To Taste
  Pepper To Taste, freshly ground
  Egg yolks 4
  Egg whites 6
Directions

GETTING READY
1. Preheat the oven to 400°F; in a souffle dish of six cup or more capacity, rub insides with butter, add grated cheese and roll cheese to coat the bottom evenly

MAKING
2. In a heavy saucepan, melt butter over medium flame, add flour and cook till the flour changes colour to a pale tan
3. Add milk and cook until the sauce thickens and stir all the while, breaking any lumps that form; add blue cheese and season with nutmeg, salt and pepper; also add egg yolks and keep warm
4. In a bowl, beat the egg whites till stiff; add a quarter of it into the sauce, blend and add the rest of the whites, blending with a spatula
5. Pour this mixture into the baking dish and place it in the upper half of the oven; turn the temperature down to 350° F adn bake for half an hour or less till it passes the cake test

SERVING
6. Serve at once
