Clarified Butter For Cooking
|Butter||1 Cup (16 tbs) (2 Sticks)|
1. In a 2-cup liquid measure, melt butter slowly on Low for 1-1/2 to 2-1/2 minutes or until completely melted and oil starts to separate, but butter has not started to bubble or cook.
2. Let butter stand a few minutes.
3. Skim off foam.
4. Slowly pour off yellow oil and reserve.
5. Discard whey.
6. Using for cooking.
