Cheese Souffle

Ingredients
  Butter 4 Tablespoon
  Flour 4 Tablespoon
  Mustard 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Milk 1 Cup (16 tbs)
  Shredded sharp cheese 1 Cup (16 tbs)
  Eggs 3
  Cream of tartar 1⁄4 Teaspoon
  Shrimp sauce 2 Cup (32 tbs)
Directions

Melt butter; stir in flour, mustard, salt and pepper.
Add milk gradually, stirring constantly.
Stir in cheese; remove from heat.
Blend in well-beaten egg yolks.
Beat egg whites with cream of tartar until stiff peaks form; fold into cheese mixture.
Pour into 1 1/2-quart souffle dish.
Form crown by running tip of knife through souffle mixture 1 inch from edge of dish.
Set dish in pan of water.
Bake at 350 degrees for 50 to 60 minutes or until puffed and golden.
Serve immediately with shrimp sauce.
