Chilled Orange Soufflé
|Grand marnier/Marsala||6 Tablespoon|
|Heavy cream||1 Cup (16 tbs), whipped|
|Lemon leaves/Camellia / other glossy leaves||6|
|Powdered cocoa/Grated chocolate||2 Tablespoon (For Decoration)|
1 Using a sharp knife, slice off the tops of oranges.
2 Scoop out the pulp and pith just enough to leave a firm shell. Keep the pulp aside.
3 In a bowl, add egg yolks, sugar and grand marnier. Beat throughly until smooth.
4 Gradually fold in whipped cream into the mixture for a liquid consistancy.
5 Fill the orange shells with the mixture and freeze in the top of the refrigerator until firm, preferably overnight.
6 Decorate the tops with piped whipped cream and dust lightly with cocoa or grated chocolate. Spike with a lemon, camellia or other glossy green leaf.
7 Serve with petits fours or macaroons.
