|Milk||1 Cup (16 tbs)|
|Pepper white||1⁄4 Teaspoon|
|Butter||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
1) Mix together flour, butter and milk for the white sauce.
2) Add in pepper and cayenne to taste.
3) Mix a little of this sauce with egg yolk.
4) Return the yolk mixture back into the sauce and stir cook for 1 minute, until it becomes smooth.
5) Stir in butter, a little at a time and then pour in lemon juice.
6) Use as required.
