Fillet Of Pike Au Gratin
|Pike fillets||3 Pound|
|Chicken stock||1 Cup (16 tbs)|
|Finely chopped onion||1 Tablespoon|
|Onion||1 Tablespoon, finely chopped|
|Lemon juice||1 Tablespoon|
|Minced parsley||1 Tablespoon|
|Toasted bread crumbs||2 Tablespoon (For Garnish)|
|Bread crumbs||1⁄2 Cup (8 tbs), toasted (For Garnish)|
Melt the butter in a large measuring cup for 30 seconds.
Blend in the flour, and add the chicken stock, onion, lemon juice, parsley, salt and pepper.
Cook for 2 minutes, stirring at 1 minute.
Arrange fillets in baking dish and pour sauce over them.
Cover and cook for 3 minutes.
Scoop up some of the sauce and pour it over the top of the fish.
Cook an additional 3 minutes, remove from oven and let stand 3 minutes.
Sprinkle on toasted bread crumbs.
Place under broiler of conventional stove for light browning, if desired.
