No Fail Hollandaise Sauce
|Lemon juice||2 Tablespoon|
|Pepper white||1 Dash|
|Butter/Margarine||1⁄2 Cup (8 tbs), cut in pieces|
|Dried tarragon leaf||1⁄4 Teaspoon|
|Fresh lemon peel||1⁄4 Teaspoon, grated|
1 In a blender container, combine egg yolks, lemon juice, salt and pepper.
2 Cover and blend at low speed until frothy.
3 In a 2-cup glass measuring cup, place butter or margarine.
4 Microwave at 100% (HIGH) for 1 to 1-1/2 minutes or until melted.
5 With blender at high speed, slowly pour in melted butter or margarine, blending constantly until mixture is very thick.
6 Stir in tarragon and lemon peel.
7 To warm, pour into same glass measuring cup or a sauce boat; set in bowl of hot water.
8 The hot water should be at the same level as the sauce.
9 Microwave at 30% (MEDIUM LOW) for 5 minutes, or until warm; stir every 2 minutes.
10 Stir before serving.
Cover and refrigerate any leftover sauce.
