Faggots Of French Beans

Ingredients
  Green beans 2 Pound
  Shallots 8
  Butter 2 Ounce
  Salt To Taste
  Sugar 1 Teaspoon
  Water 1 Cup (16 tbs)
  Bay leaf 1
  Parsley sprigs 2
Directions

GETTING READY
1. Remove the top and tail of the beans and remove the strings
2. Trim the shallots and add greens into boiling water with a little salt in it; drain and rinse under water at room terperature

MAKING
3. Divide the beans into eight bundles of roughly the same size and tie them with the shallots
4. In a large pan, heat an ounce of butter and place the beans and shallot bundles in it; add salt, sugar, water, bay leaves and parsley and allow to boil
5. Turn the heat down and cook gently with the lid on for three quarters of an hour; shake the pan once in a while to toss
6. Remove the bay leaves and parley andlift the bundles of beans, placing them o warm serving plates
7. Allow the liquid in the pan to boil and reduce to about three tablespoons and adjust seasonings if necessary

SERVING
8. Pour the sauce over the beans and serve at once
