1) Finely shred the meat.
2) Peel the vegetables and chop them.
3) In a large pan, put all the ingredients. Add the egg white in the end.
4) Gently heat the mixture. Beat it continuously with a wire whisk till a thick froth is formed on the surface.
5) Stop beating the mixture and immediately reduce the heat. Simmer the consommé very slowly for about 1 ½ to 2 hours. Ensure that the liquid does not reach boiling point. The foam layer will break up and cloud the consommé.
