Green Beans Au Gratin
|Beans||2 Cup (32 tbs) (fresh)|
|Evaporated milk||1 Cup (16 tbs)|
|Cheese||1⁄2 Cup (8 tbs), grated|
1. Preheat the oven
2. Wash and clean the beans and then immerse in boiling salted water until tender. Cook on high heat and then drain, reserving 1 cup bean stock.
3. In a large double boiler, add the butter and melt. Then blend in flour and seasonings and stir until smooth and bubbling.
4. Add reserved bean stock to milk; stir milk mixture into flour mixture gradually to form a thick paste. Cook, this mixture while stirring constantly until sauce is smooth and thickened
5. Place beans in greased casserole; pour sauce over beans. Sprinkle with cheese. Bake at 350 degrees for 20 minutes.
6. Serve hot
