Seaweed Ratatouille

Ingredients
  Onion 1 Large, thinly sliced
  Garlic 1 Clove (5 gm), minced
  Oil 4 Tablespoon
  Seaweed 1⁄2 Cup (8 tbs), soaked
  Sweet red pepper 1 Small, sliced
  Eggplant 2 Cup (32 tbs), diced
  Tomatoes 2 Large, diced
  Corn 1 Cup (16 tbs)
  Paprika 1 Pinch
  Chopped basil/1/2 teaspoon dried basil 1⁄2 Tablespoon
  Dried oregano 1⁄2 Teaspoon
Directions

MAKING
1) In a heavy saucepan, saute the onion and garlic in oil, stir in all the other ingredients and
simmer covered, for about 30 min, or until the eggplant pieces are tender.

SERVING
2) Serve on a nice dish.
