Ingredients
  Whole small mushrooms 1 1⁄2 Pound
  Water 2 Cup (32 tbs)
  Olive oil 1 Cup (16 tbs)
  Lemon 1 , juiced
  White vinegar 1 Tablespoon
  Celery stalk 1
  Garlic 1 Clove (5 gm), peeled
  Rosemary 1⁄2 Teaspoon
  Sage 1⁄2 Teaspoon
  Fennel branch 1
  Thyme 1⁄2 Teaspoon
  Bay leaf 1⁄2
  Freshly ground coriander 3⁄4 Teaspoon
  Peppercorns 8
  Salt 3⁄4 Teaspoon
Directions

MAKING
1) In a saucepan, mix all the ingredients, allow to boil and simmer for 5 minutes, stirring frequently.
2) Remove the mixture in a bowl and place in the refrigerator to marinate overnight.

SERVING
3) Arrange the mushrooms inserted with the wooden picks over a bed of the lettuce leaves as an appetizer.
