Peach Melba

Ingredients
  Sugar 1 Cup (16 tbs)
  Water 1 1⁄2 Cup (24 tbs)
  Vanilla extract 1 Teaspoon
  Peaches 6
  Frozen raspberries/2 cups fresh raspberries and 1/2 cup sugar 10 Ounce, thawed (1 Package)
  Vanilla ice cream 3 Cup (48 tbs) (6 Scoops)
Directions

MAKING
1) In a saucepan, mix sugar, water, and vanilla extract.
2) Simmer and stir till sugar dissolves.
3) In a bowl out peaches and cover with boiling water.
4) Let stand for 1 minute. Drain and peel.
5) Halve the peaches and discard the stones.
6) Add the peaches to sugar-water mixture and cook on simmering heat till tender.
7) Drain the peaches on the rack and cool.
8) Chill.
9) Sieve the raspberries. Incase using fresh raspberries, stir 1/2 cup of sugar to the puree.

SERVING
10) Place peaches on scoops of vanilla ice cream. Garnish with raspberry puree.
