Celery Root Remoulade
|Celery knobs||3 Medium|
|Mayonnaise||1 Cup (16 tbs)|
|Dijon mustard/Dusseldorf mustard||1 Tablespoon|
|Lemon juice||To Taste|
1) Pare and slice the celery knobs into about 1/16 inch thick pieces, then cut them into very thin strips.
2) In a bowl, mix the mustard and mayonnaise together, add lemon juice to taste and blend well.
3) Gently stir in the celery strips, until thoroughly coated and refrigerate until ready to serve.
4) Serve chilled in a nice plate.
