Lemon French Toast With Poached Plums

Ingredients
  Eggs 2 , beaten
  Milk 3 1⁄2 Fluid Ounce (100 Milliliter)
  Lemon zest 1
  Caster sugar 4 Tablespoon
  Bread slice/Brioche 4 , cut in half diagonally
  Butter 2 Ounce (50 Gram)
  Plums 1 Pound, halved, stoned (450 Gram)
  Lemon juice 1 Tablespoon
  Creme fraiche/Vanilla ice cream 1⁄2 Cup (8 tbs)
Directions

MAKING
1. In a shallow dish, mix in eggs, milk, lemon zest and a tablespoon of sugar; add bread and then the liquid and let it soak
2. In a frying pan, add about two tablespoons of sugar and 25gms of butter and heat gently till sugar melts
3. Add in the plums and fry till soft and the juice is golden brown; add lemon juice and heat gently into a light syrup
4. In a large nonstick frying pan, heat the rest of the butter and add slices of bread and fry on eah side till golden brown

SERVING
5. On each of the serving plates, put two slices of bread, sprinkle the sugar and spoon the plum and juices
6. Goes well with ice cream or creme fraiche too
