Ratatouille With Baby Marrows

Ingredients
  Oil 4 Tablespoon
  Spanish onion 1 Large
  Green peppers 2 , deseeded
  Aubergines 2 , sliced
  Baby marrows/1 pound marrow, diced 1 Pound, sliced
  Tomatoes/14-ounce tin tomatoes 6
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Marjoram/Oregano 1 Pinch
  Garlic 1 Clove (5 gm)
  Parsley 1 Tablespoon, chopped
Directions

MAKING
1) In a thick pan, over low heat, heat oil and sauté onion and pepper in it for 5 minutes.
2) Stir in aubergine and sauté for 5 minutes more.
3) Cover and simmer after mixing in rest of the vegetables, sugar, salt, marjoram or oregano and garlic, until vegetables are tender, but not mushy.

SERVING
4) Garnish with parsley and serve hot or cold.
