|Flour||1⁄4 Cup (4 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
|Whipping cream||1⁄2 Pint|
|Instant coffee||1 Teaspoon|
Beat first 3 ingredients until stiff.
Add sugar, beat again at top speed until very stiff.
In another bowl, beat 4 egg yolks until lemon colored and thick.
Fold yolks into whites and add sifted flour and chopped nuts.
Grease jelly roll pan.
Cover with waxed paper (wax paper should be greased also).
Spread mixture on this and cook in pre-heated oven 375 degrees for 10-12 minutes (until it springs back when touched).
Cool slightly and turn out on clean dish towel.
Roll up (paper, towel and all).
Whip 1/2 pint whipping cream and add 1 teaspoon vanilla, 1 teaspoon instant coffee and sugar to taste.
Unroll and spread, remove paper and reroll.
Chill in freezer until ready to slice and serve.
