GOAT BRIE CHEESE STEAKS

|Goat brie round||1 (Woolwich)|
Prepare 1 pound Prime Rib Steak by hand slicing thin or have your butcher machine slice. Cook steak Medium or Medium Rare. Cook with salt and pepper and reserve. Carefully cut off rind from one round of Woolwich Goat Brie and in sauce pan, melt it down with a bit of milk. Mixed melted goat brie/milk with sautéed caramelized onion (medium dice, 1 cup) and finely diced (medium size) fennel bulb to make a thick sauce. Cut loaf of fresh, soft Italian bread; you can cut through or cut traditionally with a "hinge." Mix cooked steak with sauce and place in loaf. Garnish with finely cut fennel frond. Cut into 2 inch portions (so you can share).
Tip: To minimize waste, use a good cheese plane to carefully cut off rind from very cold round of brie.
