Crabmeat Au Gratin
|Grated cheese||1⁄2 Cup (8 tbs) (Half Parmesan And Half American)|
|Lump crabmeat||2 Cup (32 tbs) (Carefully Pick Out Any Shell Pieces)|
|Cream/Evaporated milk||1 Cup (16 tbs)|
Melt butter, add crabmeat and saute 3 minutes.
Add cornstarch mixed with cream and egg yolk.
Cook until thick; season with salt, and pour into buttered casserole.
Sprinkle with cheese and paprika.
Bake at 350° only until cheese has melted.
May be baked in individual casseroles.
