Basic Crepes

Ingredients
  Quick mix 3⁄4 Cup (12 tbs)
  Salt 1⁄2 Teaspoon
  Unsweetened soy milk 1 1⁄2 Cup (24 tbs)
  Eggs 4 Large
  Unsalted butter 2 Tablespoon, cooled
  Cooking spray 1
Directions

1. Combine bake mix and salt in a medium bowl and make a well. Pour in soymilk, eggs, and butter, whisk until combined. Strain through a sieve, pressing any lumps through strainer with a rubber spatula. Let stand 5 minutes.
2. Heat a small nonstick skillet over medium heat, then remove from the heat and spray with cooking spray. Pour 1/4 cup batter in the center of the pan, immediately tilting pan to evenly coat the bottom. Cook until light brown, about 45 to 60 seconds. Depending on the you are using, either flip crepe and cook 15 seconds longer or transfer to a plate and cover with a piece of waxed paper. Continue, spraying the skillet as needed, until all batter is used.
