Sweet Potato Souffle
|Milk||1 Cup (16 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Mashed sweet potatoes||2 Cup (32 tbs)|
|Eggs||2 , separated|
|Raisins||1⁄2 Cup (8 tbs)|
|Chopped pecans||1⁄2 Cup (8 tbs)|
|Marshmallows||1⁄4 Cup (4 tbs)|
Scald milk and add sugar, salt, butter, nutmeg and potatoes; beat until fluffy.
Beat egg yolks and add to potatoes.
Add raisins and pecans.
Beat egg whites stiff, fold into potatoes and pour into greased baking dish.
Bake in moderate oven (350°F.) 50 to 60 minutes or until firm.
