Ratatouille

Ingredients
  Olive oil 2 Tablespoon
  Eggplant 1 (Aubergine)
  Yellow onion 1 Large, chopped
  Red bell pepper 1 , chopped
  Yellow bell pepper 1 , chopped
  Garlic 4 Clove (20 gm), mashed
  Chopped fresh italian parsley 2 Tablespoon
  Oregano 2 Tablespoon, chopped
  Cumin 1 Teaspoon
  Merlot 60 Milliliter (1/4 Cup)
  Tomato paste 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

In a skillet with olive oil, saute the eggplant, onion, and red and yellow peppers until wilted.
Add garlic and continue to saute another 5 minutes.
Add parsley, oregano, cumin, and salt and pepper and mix thoroughly.
Mix Merlot with tomato paste and stir into the ratatouille.
Cover and cook over low heat until very soft.
