|Garlic||1 Clove (5 gm), chopped|
|Olive oil||2 Tablespoon|
|Chopped spinach||3⁄4 Cup (12 tbs) (Fresh Or Frozen)|
|Lemon juice||2 Teaspoon|
|Ground nutmeg||1 Pinch|
Saute the garlic in oil for a minute.
Add the spinach, lemon juice, and nutmeg and heat through for 4 or 5 minutes.
Add to the basic souffle mixture .
Cool slightly and fold in the egg whites.
Pour into a buttered 1 1/2 -quart souffle dish and bake in preheated moderate oven (375°F.) for 30 to 35 minutes.
Makes 6 servings.
