Simple Mushrooms A La Grecque
|Water||375 Milliliter (1 1/2 Cups)|
|Garlic||2 Clove (10 gm), crushed|
|Lemon||4 Tablespoon, juiced|
|Olive oil||4 Tablespoon|
|Mushrooms||1 Pound, stalks removed (450 Gram)|
|Chopped parsley||1 Tablespoon|
Put the water, garlic, lemon juice, olive oil, peppercorns and a large pinch of salt in a saucepan and bring to a boil.
Reduce the heat and simmer for 10 minutes Add the tarragon, parsley sprig and mushroom caps and simmer for 10 minutes.
Drain the mushrooms and put them in a dish.
Return the marinade to the pan and boil rapidly to reduce to 1/2 cup.
Strain the marinade over the mushrooms.
Cover the dish and refrigerate.
Serve well chilled, garnished with the parsley.
