Leeks Au Gratin
|Leeks||1 Cup (16 tbs)|
|Cheese sauce||1 Cup (16 tbs)|
|Grated cheese||1 Cup (16 tbs)|
Trim the leeks, leaving 1 inch of the green part on each leek.
Cook in the usual way, boiling over a moderate heat.
When done, drain thoroughly, handling carefully so as not to break them.
Dip each one into cheese sauce, then lay them side by side in a shallow greased fireproof dish.
Spoon some more sauce over them leaving their green ends showing.
Dust with finely-grated cheese.
Leave for a few minutes in a hot oven till a golden brown.
Eaten with wholemeal bread and butter this can prove a tasty and nourishing lunch or supper dish.
Or serve as a vegetable.
