|Ham fat||1⁄4 Cup (4 tbs)|
|Ham slice||1 1⁄2 Pound (1 Piece)|
Melt ham fat in a large iron skillet.
Brown fairly thick slice of ham on both sides.
While it is browning, slice potatoes as for French-fries.
Remove ham from pan and keep it hot.
Put potatoes in melted ham fat and cook over high heat, stirring them often until they begin to brown.
Put ham slice on top of potatoes.
Cover and cook over low heat until potatoes are thoroughly cooked, about 30 minutes.
To serve, turn like a pancake.
The bottom will be golden brown and crusty.
