Crabmeat Au Gratin

Ingredients
  Chopped onions 1⁄2 Pound (Combination Of White And Green Onions)
  Celery ribs 3 , chopped
  Butter 1⁄2 Pound
  Flour 4 Tablespoon
  Evaporated milk 16 Ounce (1 Large Can)
  Evaporated milk 5 1⁄3 Pound (1 Small Can)
  Egg yolks 2 , beaten
  Fresh white crabmeat 2 Pound
  Grated cheddar cheese 1 1⁄2 Cup (24 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Saute onions and celery in butter until soft.
Add flour and blend.
Add milk and blend.
Remove from heat.
Add egg yolks, crabmeat, salt, pepper and cheese.
Put in shells or in a casserole.
Top with cheese.
Bake at 350 degrees until heated through.
Serves 6 to 8.
