AILLADE

Aillade is a typical Southern France preparation. It is a mix of fine condiments and is topped with a garlic base. Aillade adds delicious flavor to plain dishes.
Ingredients
  Basil tomatoes 1 Cup (16 tbs), chopped
  Large garlic 2 Clove (10 gm), minced
  Oil 2 Tablespoon
  Basil 1 Teaspoon, chopped
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1. Grill tomatoes. Remove skins and pips.
2. In a mortar or mill, take garlic and basil. Grind it to a paste.
3. Season with salt and pepper.
4. Add tomatoes.
5. Add oil drop by drop. Mix well.

SERVING
6. Use Aillade as a flavouring for any plain vegetable dish.
